Tom’s Beef Curry Recipe!

This is a quick and easy beef curry recipe, that Tom (Heidi’s partner) just whipped up out of nowhere, as you do. Heidi just couldn’t believe how delicious it was, she was raving about it for weeks. Upon tasting it, Heid quizzed him on every ingredient and what he did.  Things do always taste better when someone else cooks.

Ingredients:

  • 500g of Stir fry beef strips
  • 1 tin of Coconut milk
  • 1 Brown onion (diced)
  • 1 Carrot (chopped)
  • 1/4 of a Pumpkin (chopped)
  • 1/2 Fresh Pineapple (chopped)
  • 3 tsp of Curry powder
  • 2 tsp of Cinnamon
  • 1 cup of Peas
  • 1/4 of Red cabbage (Shredded)
  • Rice or Quinoa to serve

Method;

  1. Fry off Beef strips in a pan
  2. Add 1 tin (400ml) of Coconut milk
  3. Add Onion, Carrot, Pumpkin and Pineapple
  4. Add in the Curry powder and Cinnamon
  5. Combine and let simmer for 40 minutes
  6. Add Red cabbage and Peas, simmer for 3-5 minutes
  7. Serve with Rice and Quinoa
