This is one of those all-rounded recipes, I stumbled across a similar recipe years ago when I was training hard at the gym and needed a wholesome easy snack on the run in between clinic and gym life. Containing the essential food groups along with the protein, fibre and complex carbohydrates, to keep me full and nourished. I am a sucker for an easy dish, in a one pan kinda way.

Ingredients

  • 400g Kidney Beans or alternatively any other bean, mung beans, butter beans, 4 bean mix. (can be a can or dried ones that you have soaked and cooked)
  • 500g chicken mince
  • 2 eggs
  • 1 Capsicum, cut up small
  • 1 Carrot, grated or chopped small
  • 1 Zucchini, grated or chopped small
  • 1 tsp Tumeric
  • Salt and pepper to taste
  • OPTIONAL: shallots, chives, onion, garlic

Method

  1. Preheat the oven to 180 degrees.
  2. Mix together all ingredients thoroughly in a bowl.
  3. Pour the mixture into a lightly greased lasagne dish, and smooth the top with a spoon.
  4. Put into the oven for approximately 30 minutes until golden on top and cooked all the way through.
  5. Allow to cool slightly before cutting into the desired size – refrigerate.
  6. Serve with salad or eat as a healthy snack, perfect for lunch boxes.
