These easy-to-make banana blueberry muffins have been a household favourite for years now. They are so berry delicious and packed full of nutrients and good fats, perfect for that post-workout snack.


  • 3 eggs
  • 2 ripe Banana’s – Mashed
  • 1 tsp. Baking Soda
  • 2 tbsp. olive oil
  • A pinch of salt
  • 2 cups of almond meal
  • 3/4 cup of coconut
  • 1 cup of frozen blueberries


Mix all ingredients together and place in patty cases.
Place the muffins in the oven for about 15 minutes. – NOTE: These muffins don’t rise so please keep an eye on them!

Alternatively, you can add extras to your muffins, like walnuts or dates for sweetness as these muffins aren’t very sweet at all!
